Curtido (Spicy Cabbage Slaw)
Curtido is a spicy cabbage slaw often served with pupusas.

- cabbage, chopped
- onion, medium, sliced1
- carrot, finely shredded
- green beans, cooked, not too soft; optional
- beets, optional
- horseradish, grated; optional
- red pepper, finely chopped; optional
- oregano1 tsp
- vinegar or lime juice, to taste
- water, to taste
- salt, to taste

Method 3 steps
Quickly swirl the cabbage in a pot of boiling water, then drain.
Combine all the ingredients in a glass or plastic container, and mix with a wooden spoon (never metal).
Put the container in the refrigerator, and let it rest for a week so that the ingredients pickle.
